tteok-bokki with mini dumplings

two servings, 20 min prep

this lunch was something i’d made for my partner and i on my day off, and it was so lovely to finally have some time to cook again. i’d been struggling to find the time, and this recipe was so simple and quick i had to share it.

ingredients

  • two servings of tteok

  • mini dumplings of your choice

  • toppoki sauce

  • 500 ml water

  • 2 eggs

  • scallions

  • sesame seeds

  • sesame oil

  • tonkatsu sauce

first, i had to rinse two servings of tteok and set it aside

after that, i filled my pan with about 500 ml of water, 4 tbsp of toppoki sauce, my tteok, and some frozen mini dumplings i’d been meaning to eat through

keep it on medium heat, with a lid to cover it!

while your tteok and dumplings simmer, fry two eggs in sesame oil sunny side up (or however you like your eggs!)

after about 8 min, stir your tteok and dumplings, add some shredded cheese on top and let it melt

once your cheese has melted, simply transfer to a bowl, top with your egg, scallions, sesame seeds, and tonkatsu sauce and you’re done! your final product should look something like this :)
